They’re easy to prep, freezer-friendly, and packed with flavor — think warm cheddar, nutty Parmesan, tender spinach, and the perfect crunch from seasoned breadcrumbs.

Ingredients (Makes ~24 balls):
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 1 cup breadcrumbs (Italian-seasoned or plain with herbs added)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 3 large eggs
- ¼ cup finely chopped onion (optional)
- 1–2 cloves garlic, minced (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional, for a kick)
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix Ingredients:
In a large bowl, combine spinach, breadcrumbs, cheddar, Parmesan, eggs, onion, garlic, salt, and pepper. Mix well until the mixture holds together when pressed. - Form Balls:
Use your hands or a cookie scoop to roll mixture into 1-inch balls. Place them evenly on the prepared baking sheet. - Bake:
Bake for 20–25 minutes or until golden brown and firm. Flip halfway through for even browning if desired. - Serve Warm:
Serve with ranch, marinara, or your favorite dipping sauce.
Tips:
- You can use fresh spinach — just sauté 4–5 cups until wilted, then squeeze out moisture and chop.
